My First Meal Prep Meal

Day 1 of the Whole30:

I have been pinning resources, recipes and tips for sticking to the Whole30 like crazy.  I need easy recipes so titles like “recipes with 7 ingredients or less” are attractive to me. I’m not one of those people who skips breakfast.   I’m also not one of those people who cooks…sooooo.  This might be challenging.

For my first attempt, I found this “easy, delicious breakfast recipe and gave it a shot.  For the most part, I just followed the guidelines and made it my own.

I chopped some onions and spicy chicken sausage from Trader Joes, mixed in some shredded broccoli and carrots, added some garlic and mushrooms, threw in some spinach.  You sautee everything (adding the sausage last) and right before you pour into the casserole dish, add the eggs.  I had help from my daughter and Cookie Monster who helped crack eggs mix them!  Bake everything at 350 for 30 minutes.

It tastes great!


I’m pleased with the outcome and will enjoy eating this for breakfast.  It has lots of flavor, the eggs are fluffy and it is satisfying.  It’s actually better than what I normally eat for breakfast.  I give this a 10!  😊



Prepping for Whole30

Bob and I went to a party last night and found out one of our friends is about to start the Whole30 too so we are going to start a support group to hold each other accountable.  She told us about a website Cook with Tessemae where you can order dressings and seasonings that are Whole30 compliant.  This just saved my life because it was definitely one thing I was stressing about!  Anything that makes this easier makes it much more likely to sustain for the 30 days and then to incorporate the best of the program into our daily lives.  Beyond just the seasonings, this website is a great resource and she has a blog, podcasts and more recipes.

And so it begins…2017 and the Whole 30

Bob and I have decided to start 2017 with a new health and fitness routine…how original.

Phase I:  I bought the The Whole30: The 30-Day Guide to Total Health and Food Freedom and The Whole30 Cookbook: 150 Delicious and Totally Compliant Recipes to Help You Succeed with the Whole30 and Beyond and a Gourmet GJ1250 Juicer.  We have a few friends who have done this and lost a lot of weight so we’re going to give it a shot.

This is intended to be more of a “reset” than a diet but it is extremely restrictive so I’m not quite sure how we will pull this off.  Especially since Bob is not big on fruits or vegetables.  And as far as I go, I’m hoping the recipes are on the simple side so I can eat more than raw vegetables.  Hopefully at least one of the books I bought comes with a shopping list so that I can get spices and things upfront.

I looked at a couple of recipes and they don’t seem too complicated but some of the ingredients are pretty specialized and I’m just not even sure where you buy those kinds of things.  From different groups I’ve joined, I see that a lot of people shop at Aldis.   We also have Trader Joes, Whole Foods and Central Market here in Dallas so we should be able to find everything we need.

I know that meal prepping is going to be key and that’s also going to be my biggest struggle – just finding a window of time to make that all happen – but I really NEED this to work so I’m really going to give it a shot.  I worked on being more efficient at work all year in 2016 and made a lot of progress.  Now I’m going to have to bring that into the kitchen.

My plan is to get used to this way of prepping and cooking during the 30 days and then ease into a less restrictive version of this after.  I went ahead and bought 2 other cookbooks at the same time so that I am ready when the 30 days are up.

Phase II will be stepping up my exercise routine.  I bought us both a Fitbit Blaze Smart Fitness Watch, Black, Silver, Large.  I like that it tracks your sleep and that you can track your water intake and stuff like that but truth be told that’s a little more high tech than what I’m capable of at this moment so I’m just using it to track steps.  I knew I wasn’t really moving around a lot during the day but I really had no idea how little it was.  Truth really does hurt.  It also really drives home how critical it is for me to watch my diet to offset some of that inactivity.  But it’s also motivating me to take some 5 – 10 minute breaks throughout the day to get up and walk around.

Happy 1st Day of Spring!! 🌻

I’m not going to lie…Spring is my favorite time of year.  I get almost giddy just thinking about the beautiful weather – where it’s still cool but the sun is shining and you can smell fresh cut grass anywhere you go!  There’s something about it that gives me so much hope and joy!  It’s also when I begin to crave a saturation in color!!10624043_574131959431271_2041345411632420336_o

I’ve completely fallen into the Lula Roe craze!!  Gingham is once again popping up on the spring and summer 2016 runways and this time it’s in more colors and styles than ever before!  Even after buying these I was still a little dubious until they came in the mail…and I put them on…and the leggings were as buttery soft as they say!!  💕  Because they are so soft they don’t really “hold everything in” as much as I would like but the comfort definitely overrides that factor!

I also bought several really great colorful swimsuits from Swimsuits for All, along with a cute cover up!  So excited for all of this color!!
Now it was time to find the perfect manicure!  I fell in love with Dynasty as soon as I saw it.  I’ll be honest I’m not really a mixed mani girl.  Mainly because my efforts up to this point have fallen a little short.  I really wanted to do something crazy (even though that’s not super my style – but hey – Spring Fever) so I opened it up to my team. (That’s Dynasty on the left…don’t ask about the other two – you can’t get those).
Well, my team reeled it in for me and saved me from another mixed mani disaster.  Here’s the finished product:
Fun but still understated…Just Like Me!! 😃😃😃 They really “nailed it”!!!  I am so happy with it and it makes me smile and brings me joy – just like Spring!!
And it was the perfect accessory (along with my new Lula Roe shirt) to the Crawfish Boil put on by the Men’s Club at my son’s school!!  What a perfect way to kick off Spring!
