My First Meal Prep Meal

Day 1 of the Whole30:

I have been pinning resources, recipes and tips for sticking to the Whole30 like crazy.  I need easy recipes so titles like “recipes with 7 ingredients or less” are attractive to me. I’m not one of those people who skips breakfast.   I’m also not one of those people who cooks…sooooo.  This might be challenging.

For my first attempt, I found this “easy, delicious breakfast recipe and gave it a shot.  For the most part, I just followed the guidelines and made it my own.

You can follow the full recipe at the link above but this is what I did:

I chopped some onions and spicy chicken sausage from Trader Joes, mixed in some shredded broccoli and carrots, added some garlic and mushrooms, threw in some spinach.  You sautee everything (adding the sausage last) and right before you pour into the casserole dish, add the eggs.  I had help from my daughter and Cookie Monster who helped crack eggs mix them!  Bake everything at 350 for 30 minutes.

It tastes great!


I’m pleased with the outcome and will enjoy eating this for breakfast.  It has lots of flavor, the eggs are fluffy and it is satisfying.  It’s actually better than what I normally eat for breakfast.  I give this a 10!  😊

The Jamberry International Conference is coming up next month and I’m so excited!  Last year, I had just joined Jamberry when it was time to sign up so I didn’t really know what to expect.  My sister and I traveled to Utah and had a lot of fun!  Attendance was just under 1,000 Consultants. I had just earned Founder’s Club and Executive Level so I got to participate in a lot of special events and got a sneak peek at the new Mini-Heater (and one to take home) announced at Conference.  They announced StyleBox and Beauty Boost which were launching in the fall.   All of the training was inspirational and instructive and we left really excited about what we was yet to come!!  Products like the Cuticle Oil Pen, Cuticle Remover Pen, Non-Acetone Lacquer Remover (my favorite new product and the easiest and best way to remove wraps) and Nail Prep Cleanser were all still in research and development so we had no idea how things were about to change!

A lot has happened in a year and this year, I will have around 25 of my Team Members at the International Jamberry Conference! And even more exciting, it will be held here in Dallas at the Gaylord Conference Center!  There will be somewhere around 5,000 Consultants at the event and there are expected to be a lot of announcements, a product launch, an exciting announcement about our entry into Australia and New Zealand this fall and some unbelievable training and bonding time.  I’ve been putting SwagBags together for my downline for the past two months.
